Everything Bagel Quiche

This week is a VERY exciting week for the Mr. and I because this morning we packed up our cars with what was left of our home (the movers already took most of it), and are headed to our new home in Des Moines.

If I had a word or two to sum up the last two weeks of our lives I’d have to describe it as crazy lovely. It’s been a crazy time of tears, see-you-laters, transition and waiting — but it’s also been a time of lovely gatherings with friends and last-minute adventures in Minneapolis. We are blessed to have so many friends from the places our lives have connected us with.

Needless to say with all of the commotion happening lately, I’ve need quick, healthy and delicious meals more than ever before. This bagel quiche is my most recent quick cooking obsession and I know you are going to love it to once you try it!

The caramelized onions take a little bit of prep and cooking time but beyond that this bagel quiche is about as simple as it gets. Tear bread out, pour egg mixture in, wrap in foil, bake and eat! The cherry on top of this wonderful quiche? You get to eat it with your hands. Total win win here. 🙂

Bagel Quiche

You can throw the bagel guts away if you want, but I recommend keeping them and turning the scraps into breadcrumbs. Click here for a great homemade breadcrumbs tutorial from Whole Foods.

Everything Bagel Quiche

Everything Bagel Quiche
Serves: 2
Ingredients
  • ½ large onion, cut into long strips
  • 1 tablespoon olive oil
  • ¼ cup chopped asparagus
  • ¼ cup sundried tomatoes
  • 1 teaspoon minced garlic
  • Salt and pepper to taste
  • 4 eggs
  • 2 Canyon Bakehouse Everything Bagels
Instructions
  1. Preheat oven to 375˚ F.
  2. Heat 1 tablespoon of olive oil in a medium saucepan over medium heat. Carmelize onions by cooking slowly and stirring for about 30 minutes (you may have to add a dash of sugar to help with the caramelization process and turn the heat down to medium-low to prevent from burning.)
  3. Separate each bagel from top to bottom and carefully hollow out the bread inside, using your fingers to pull the bread away from the crust of the bagel. Tear 4 sheets of aluminum foil off and spray them with non-stick spray. Then set the bagel cut-side-up on the foil.
  4. Whisk together eggs and remaining ingredients and pour into the hollowed out bagels.
  5. Wrap the bagel up the sides with foil, but keep the top open. Bake for 25 minutes, or until the egg is set.

    YAY to moving day!! I know you will be missed by friends and family, but I also KNOW Des Moines is going to bring you and the hubsters WONDERFUL things. I can feel it! Hope you are traveling safely right now! Anyways, onto this quiche – umm AMAZING! I have a serious addiction to everything bagels, but my waistline doesn’t concur. I’m always looking for creative ways to get my fix and this is just PERFECT! LOVE LOVE LOVE LOVE LOVE! I mean, LOOOVE this bagel quiche, my dear. I can not wait to get this in my belleh! Pinned!     Good luck with the move, that’ll be scary and exciting! You seem to be approaching the change with plenty of optimism, so I doubt you need the good luck! 🙂 Also now I am desperately craving bagels. Carmelized onions are always worth the wait!

    My favorite part of these is how customizable they are! Perfect for huge family gatherings….you could even have a DIY bagel quiche bar, with everyone adding what they like.

Heard these words during a sermon I was listening Heard these words during a sermon I was listening to on Mark 9:23 this week, and I can’t get over the powerful truth behind what Kenneth E. Hagin is saying here. 🔥 Jesus is the furthest thing from an irresponsible dreamer. He’s the Son of God, and we can take what He says to the bank.
I’ve been thinking a lot lately about what a pri I’ve been thinking a lot lately about what a privilege it is to be part of the family of God — to be able to get to know brothers and sisters in this life whom we will know for eternity. 

There is no greater joy than knowing, loving, and living in communion with Father God, but knowing, loving, and living in communion with His people is a blessing I will never take for granted. 

When I think about the true, kingdom friendships God has placed in my life over the past two years (you know who you are), I am overcome with tears of gratitude. After years of moving all over the country, being backstabbed by people I thought were my friends but really were just using me, and losing friends to other transitions in life, I have watched Him bring around my husband and I a beautiful array of friendships I previously didn’t know were possible. 

So today, I just want to say thank you to my brothers and sisters in Christ. If you think you’re not making much of a difference in this world, just know you’ve made a difference in my life just by being you and being willing to shine the love and light of Jesus.

So often, when we think about changing the world, we think about reaching thousands or millions for Christ. But it starts with strengthening, encouraging, and building up the family and body of Christ first. Now, more than ever, let us give thanks for one another and nurture the relationships God has entrusted us with. I believe there is more value to doing this than we know.

I don’t talk about it much on here, but when God told me that @shefoundjoy would not be touring for awhile, I knew I’d need to find something more than the part-time work I’d previously been doing in addition to ministry.

That’s when a dear friend from college reached out to see if I’d be interested in something with Salesforce. My husband and I prayed about it and felt like God gave us the green light. So I went for it, and God provided big time. Initially, it was just supposed to be a part-time thing, but after a month, I was offered to come on as a full-time contractor. I can honestly say I never saw this job coming ... I never saw myself enjoying a role I never knew existed let alone enjoying work outside of ministry. But nearly one year into working with my team, my heart is full of gratitude that God led me in this direction for this season He has us in. I know I’ll be doing traveling ministry again someday, but in the meantime, I’m content with where God has me. And that’s a beautiful thing.

I share all of this to say, don’t turn down a potential opportunity from the Lord just because it doesn’t line up with what you thought it would look like. Provision and blessing often come in unexpected ways. God might ask you to take a job you think is completely unrelated to what you feel like He has called you to do. Don’t try to analyze it. Just listen for His voice, follow His leading, and obey what He tells you to do. You never know what He has in store ...
I have tried to be cognizant of how many pregnancy I have tried to be cognizant of how many pregnancy pictures I’ve posted during this season of our lives, as I know that it can be a sensitive subject for so many. Sometimes, I think it’s easy for us to look at someone’s seemingly perfect Instagram feed and feel like we’ve missed the boat or aren’t as blessed as they are. 

What I want to say about this is that we all need to start considering the bigger story of each one of our lives. We need to remember that no one’s life is 100 percent perfect all of the time. Trials are real. Warfare is real. Heartache is real. But so is hope. So is healing and restoration. And so is the testimony of Jesus. 

I remember when I was really sick, I didn’t want to hear testimonies of how people had been healed. It hurt my heart too much, because part of me believed I had somehow missed the boat. But then God woke me up and changed my heart. Even when things didn’t change in the natural, I started to celebrate breakthrough in other people’s lives and expect it for my own life. Because if God could do it for someone else, certainly He could and would do it for me. 

I share all of this to say, when we read about someone’s testimony or good news, we need to consider what might have led up to that good news being able to be shared. Consider that they, too, just like you, most likely have been through the fire a time or two. Consider all of the tears, prayers, or sleepless nights that may have preceded the testimony they are now able to share. And then celebrate. Celebrate the God who broke through for them and will break through for you. 

Rejoice, beloved. No matter what you’ve been through, there is wonderful joy ahead.
A few weeks ago, I felt the Lord nudging me to rec A few weeks ago, I felt the Lord nudging me to record a variety of journal entries, Bible verses, and prophetic words to play in my ear during labor (and the weeks leading up to it). As I listened to the recording this morning, two phrases stuck out to me the most: “determine to trust in His faithfulness,” and, “let go, surrender, and trust.”

I don’t know about you, but speaking those two phrases out loud just brings such faith, hope, and peace to my heart. 

Reminder: Even when man is faithless, God remains faithful. Determine to trust in His faithfulness today. You are not forgotten. You are seen and loved. And there is not a moment that He leaves your side.

Do you know what is included in your inheritance in Christ? A shortlist from my time with the Lord pulled these keys words out: wholeness of body, soul, and spirit, healing, grace upon grace, redemption and forgiveness of sins, peace, love, joy, good gifts, freedom, righteousness, the Holy Spirit, a heavenly reward, blessings that overtake us, protection, deliverance, power and authority.

A few months ago, I dreamed that the Father gave m A few months ago, I dreamed that the Father gave me a bracelet. 

As He held it out in front of me, I took a moment to behold the beauty of this priceless gift. And that’s when I noticed: This was no ordinary bracelet. Not only did one of the chains feature a glistening diamond, but both of the bracelet’s bands were interlocked by a golden connector that said “WORTHY” on it. And so, though the bands were two separate entities, the two became one because of this little connector.

The Father placed the bracelet in my hands and said, “my beloved, it’s yours.” And then I woke up.
